OF MIND SALAD
1 tbs. Dijon mustard
¼ cup extra virgin olive oil
1 tbs. red wine vinegar
3 cups mixed greens, washed and dried
½ cup green beans, cooked
2 plum tomatoes, diced
½ cucumber, seeded & chopped
½ small red onion, thinly sliced into rounds
½ cup black olives, pitted
1 cup boiled potatoes, sliced
2 hard-boiled eggs, sliced into quarters
2 tablespoons capers
Whisk mustard, olive oil and vinegar until smooth. Set aside in a small bowl.
Decorate plate with mixed greens, then layer green beans, tomatoes, cucumbers, onions, olives and potatoes lining the outside of the greens.
Add hard-boiled egg quarters and sprinkle salad with capers.
Drizzle mustard dressing over salad and serve immediately.
